Vegetable Biryani - Simple Method

  • 2 cups of basmathi rice
  • 2 bay leaves
  • 2 cloves
  • 2 small size cinnamon sticks
  • 1 star anise
  • 3 onion ( 1 sliced and 2 chopped)
  • 2 chopped tomato
  • 1 cup of frozen vegetables ( carrot,peas,beans)
  • 1 cup of chopped cauliflower
  • 5 slited green chillies
  • 1 tbsp of chilli powder
  • 1 tbsp of ginger garlic paste
  • 2 tbsp of chopped cilantro
  • 1/2 tbsp of garam masala
  • 1/2 tbsp of lemon juice
  • 2 tbsp of ghee
  • oil


  1. Wash and Soak basmathi in water for 20 minutes.
  2. Wash all the vegetables and keep it aside.
  3. Heat oil in pan for deep frying, add sliced onion fry untill it turns golden brown colour and set aside.
  4. Heat 2 tbsp of oil in pressure cooker add bay leaves,cloves, cinnamon and star anise. then add chopped onion, saute till it transparent
  5. Add ginger garlic paste,saute for few minutes then add tomato, cook until soft.
  6. Add vegetables, chilli powder, garam masala and salt, close the cooker with plate and cook until the vegetables cooked well.
  7. Add 3 cups of water, cilantro and lemon juice. Check for the salt taste after adding the water.
  8. Increase the flame and wait till the water boils. Add rice, ghee and close the cooker with its lid. 
  9. When the steam starts to arise, put the weight on the lid and wait for 1 whistles and then turn off the flame.
  10. Keep the pressure cooker aside for some minutes until all the steam settles down
  11. Finally garnish it with fried onions and Serve hot with Raita or any gravy.

Vegetable Stuffed Bun

  • For Bun
  • 2 cups of all purpose flour/ Maida
  • 3/4 tbsp of active dry yeast
  • 1 tbsp of sugar
  • 1/2 cup of warm milk
  • 1 tbsp of olive oil
  • 1 tbsp of butter
  • 1 tsp of Salt 
  • For stuffing
  • 2 potatoes
  • 1/2 cup of frozen peas.
  • 1 chopped onion
  • 1 tsp of ginger garlic paste
  • 1 tbsp of chilli powder
  • 1 tsp of fennel seeds
  • 1/8 tsp of turmeric powder
  • 2 tbsp of chopped cilantro
  • salt to taste


1. Boil the potatoes and set aside.
2. In a small bowl add warm milk, sugar, salt and yeast. stir until the sugar and yeast dissolves and rest for 10 minutes.

3. Take a large bowl, add all purpose flour, yeast mixture and knead for few minutes.
4. Add little water to make the dough right consistency. Finally add oil and knead well.
5. Close the dough with plastic wrap/ lid. Rest for 1 hour. 
6. Peel the outer skin of the potatoes and mash it with fork.
7. Heat oil in pan, add fennel seeds and onion, saute till it transparent.

8. Add ginger garlic paste and peas, saute for few minutes.
9. Add mashed potatoes chilli powder, turmeric powder and salt, mix thoroughly. Close the lid and cook until raw smell goes away.
10. Turn of the flame, add cilantro and let it cool for sometime.

11. After an hour, the dough should doubled the size. Knead it again using oil.
12. Divide the dough into 7 equal parts and roll into balls.
13. Line the baking tray with baking sheets.
14. Take a one ball and make it like small disc, Place a 2 tbsp of stuffing in the centre and bring the edges to seal.

15. Place the bun in baking tray and repeat the process for the rest of the dough.
16. Brush the bun with butter and cover it with lid / plastic wrap, let it sit for few minutes.
17. Preheat oven to 200 deg C and bake the buns for 18 to 22 minutes or until it turns golden brown color. 
( mine took 19 minutes)
18. Brush butter on top of the buns and serve warm with coffee / tea.

Bread Upma

  • 6 slices of Bread
  • 1 big onion chopped
  • 1 tomato chopped
  • 5 slitted green chilies
  • 1/4 tsp of chopped ginger
  • 1/2 tsp of red chili powder
  • 1/8 tsp of turmeric powder
  • 1 tbsp of oil
  • 1/2 tsp of mustard seeds
  • Cilantro for garnishing
  • Salt to taste

  1. Remove the four sides of the bread (brown part). cut into small  cubes and keep it aside.
  2. Heat oil in pan. Add mustard seed, when it splutters add green chillies, ginger.
  3. Add onion, fry till it becomes transparent. then add tomato, cook for few minutes.
  4. Add turmeric, chilli powder and salt, close the lid and reduce the flame, cook until the raw smell goes away.
  5. Finally add bread into it and mix all, make sure the bread is well coated with the spices.
  6. Garnish it with cilantro and serve.

Bread Pizza

  • 2 slice of wheat bread
  • 1/2 cup of chopped onion
  • 1/2 cup of chopped red bell pepper
  • 1/2 cup of Mozzarella cheese
  • 1 tablespoon of tomato sauce
  • 1 teaspoon of chilli flakes
  • 1 teaspoon of unsalted butter
  • Salt to taste (optional)


1. Spread tomato sauce on one side of bread evenly. Add onion and bell pepper.

2. Add Corn and mozzarella cheese. Microwave for 30 seconds.

3. Heat butter in tawa, toast the bread for 1 minute over medium flame.

4. Sprinkle some chilli flakes and serve!

Vanilla cake with Chocolate Icing

Delicious Chocolate cake from my kitchen :)
For Chocolate Lover!!!

  • For Cake:
  • 1 1/2 cup of all purpose flour
  • 1 cup of sugar
  • 1/2 cup of milk
  • 1/2 cup of butter
  • 2 egg
  • 2 tsp of pure vanilla extract
  • 1 1/2 tsp of baking powder
  • 9*9 Baking dish
  • For icing:
  • 100 g of dark chocolate 
  • 1 cup of whipping cream
  • 1/2 cup of icing sugar
  • 3 tbsp of butter
  • For Decoration:
  • 1/2 cup of chasewnuts
  • 1 tbsp of chopped pistachios

To make cake:
  • Preheat oven to 350 deg F and grease the baking pan with butter,set aside.
  • Take a bowl ,Cream butter and sugar. Add egg, beat until it becomes light.
  • Add vanilla extract and baking powder, Mix thoroughly.
  • Take another bowl, mix flour and milk without any lumps.
  • Add the flour batter into the cream mixture and mix well.
  • Pour the batter into the greased pan and bake until a toothpick inserted in the centre of the cake and comes out clean. ( Mine took 30 minutes)
  • Let it cool for sometime and cake is ready !

To make icing:
  • In a small saucepan, add about an inch of water and bring it to simmer. Place a small plate over the saucepan and add chocolate, cook untill the chocolate melts.
  • In a bowl, cream butter and icing sugar. 
  • Add the melted chocolate and whipping cream, mix until smooth.

To decorate the cake:
  • Evenly spread the chocolate icing on the cake and decorate with chasewnuts and pistachios.

Yummy, Chocolatey Cake is Ready!!!!!

Maddur Vadas

        I usually make evening snacks for my hubby. Really bored of doing the same vada recipes. I got this recipe from one of my friend Sangeetha ( Eat n Eat Little More). Maddur Vadas is a Crispy snack from Karnataka state. This crispy fritters is made from Rawa, rice flour and maida flour flavored with onion, curry leaves and cilantro. These vadas are perfect evening snack with hot coffee/tea. Here is the recipe for the vada.

  • 1 cup of sooji/rawa
  • 1 cup of all purpose flour
  • 1 cup of rice flour
  • 1 chopped big onion
  • 5 chopped green chilli
  • 1/4 cup of curry leaves
  • 1/4 cup of chopped cilantro
  • 1/4 tsp of Asafoetida
  • 1/2 tsp of baking soda
  • Oil for deep frying
  • Salt to taste

  1. Heat oil in pan, add onion and fry untill it becomes translucent. Let it cool for sometime.
  2. Take a bowl, add rawa, rice flour, all purpose flour, chillies, asafoetida, curry leaves, cilantro, baking soda and salt. Mix altogether.
  3. Add the cooked onion into the bowl. Make a dough by adding water little by little.
  4. Knead wel for about 3 minute and cover it with damp clothe, rest for 30 minutes.
  5. Take a small portion from the dough, Greese palm with little water, make it like flatten round shape.
  6. Heat oil in kadai, gently transfer the vadas into the kadai and fry till it becomes golden brown and crispy.
  7. Repeat this process for remaining dough. Remove the excess oil using kitchen towel.
  8. Serve this yummy vadai with hot Coffee or Tea :)

Spicy Chicken seekh Kebab

  • 300 g of minced chicken
  • 2 tsp of ginger garlic paste
  • 6 red dry chilli
  • 1/2 cup of chopped cilantro
  • Salt to taste
  • Oil for shallow frying

  1. Coarse grind the dry chilli and cilantro.
  2. Mix the chicken, ginger garlic paste, dry chilli paste and salt as needed
  3. Take a small portion from chicken, make a roll of about 2 inch by using your palm.
  4. Heat oil in tawa, reduce the flame and shallow fry the kebab. 
  5. Fry until it turns to brown color. Make sure all sides of the chicken is cooked well.
  6. Serve hot!

1. You can adjust the dry chilli quantity to suit your taste.

Kesar Pista Kulfi / SNC Challenge # 11

This is my First challenge in South Vs North Challenge  by Divya Pramil ( You too can cook ). I am so proud to be part of this Event and really very excited to try different cuisines. I am belong to Southern team. This month Challenge for southern team is KESAR PISTACHIOS KULFI, hosting by Shruti and for Northern team is PAASI PARUPPU PAYASAM, hosting by Divya. Kesar pistachios kulfi is a frozen diary dessert which is made by milk, condensed milk and sugar, and flavored with pistachios,cardomon and saffron strands. The texture is very creamy.We really liked and enjoyed it lot :). Thanks to shruti for giving this scrumptious recipe. 

  • 4 cups of Milk
  • 1/2 cup of Condensed milk
  • 4 tbsp of Sugar
  • 1 tbsp of Cornflour 
  • 1/8 tsp of Cardoman powder
  • 1/4 cup of Chopped pistachios
  • 1/4 tsp of Saffron strands
  • Few drops of Rose water


1. Make a thin paste with cornflour and enough milk, set aside.

2. Heat heavy bottomed vessel. Add milk, condensed milk and sugar. Bring it to a boil and keep scraping the sides of the vessel to form thick consistency.

3. Reduce the milk to three fourth of the quantity over medium flame.

4. Now add cornflour paste, pistachios, cardoman powder and saffron. Stir constanly for few minutes to avoid lumps.

5. Turn off the stove and let it cool for sometime. Add rose water and give a stir.

6. Transfer it into popsicle mould and refrigerate it for 6 hours.

7. Once the kulfi is completely set, just pass the mould under the tap water for a second. Pull the kulfi from the mould.

8. Serve Immediately :)

Pepper Chicken Gravy

  • 1/2 kg of chicken
  • 2 small bay leaf
  • 1 tsp whole garam masala
  • 2 chopped onion
  • 1 chopped tomato
  • 2 tsp of ginger garlic paste
  • 1/2 tsp of chilli powder
  • 1 tbsp of ground pepper
  • 1 tsp of cumin seed powder
  • 1/2 tsp of turmeric powder
  • Salt to taste
  • 2 tbsp of olive oil
  • Cilantro for garnishing


  1. Wash the chicken with turmeric powder, set aside.
  2. Heat oil in pan. Add bay leaf and whole garam spices.
  3. Add onion, saute till it turn to brown colour.
  4. Add ginger garlic paste, saute for few minutes. Add tomato, fry until it becomes soft.
  5. Add chicken,chilli powder, cumin seed, half cup of water and salt. Mix and cook for 5 minutes over medium flame.
  6. Now add the ground pepper, close the lid and cook until the chicken cooked well.
  7. Finally, garnish it with cilantro. Serve with any rice varieties, roti, paratha.

Javvarisi Payasam | Sago kheer | Sabudana kheer


  • 1 cup of javvarasi | sago
  • 1/2 cup of sugar
  • 1 cup of milk
  • 1/8 tsp of cardoman powder
  • 10 number of chasew nuts (broken)
  • 1 tsp of ghee, divided
  • A pinch of salt

  1. Heat 1/2 tsp of ghee in pan, fry javvarasi | sago for few minutes.set aside.
  2. Roast cashew nuts in remaining ghee and set aside.
  3. Boil javvarasi with 2 cups of water, cook until it becomes transparent.
  4. Add sugar in it, stir gently until it dissolves completely.
  5. Add milk, cardoman powder and stir, cook for few minutes.
  6. Finally, add roasted cashew nuts. Serve cold or hot.

Cheesy Pasta

  • 1 1/2 cups of corkscrew pasta
  • 1/2 - 1/4 cup of medium salsa 
  • 6 garlic pods minced
  • 1 cup of Mozerella cheese
  • 3 tbsp of chopped cilantro
  • 1/2 tbsp of pepper (optional)
  • Salt to taste
  • olive oil

  1. Boil the pasta with 1 tablespoon of olive oil and pinch of salt, then drain the water, keep it aside.
  2. Heat oil in pan. Add garlic and pasta, saute for few minutes.
  3. Add salsa, pepper and salt as needed, cook till the sauce blend with pasta.
  4. Turn off the flame, transfer the pasta into microwave bowl.
  5. Spread cilantro and cheese on the top of the pasta. cook it for 1 minute in microwave.
  6. Cheesy pasta is ready to serve now. Enjoy !

Orange Lemonade

        Lemonade is lemon flavored drink and great refreshing drink during summer. Home made lemonade is uncarbonated drink made from lemon juice, sugar and water. Here i tried with orange juice and it gave me wonderful flavor :). Orange and lemon juice is great combo. It can be serve as welcome drink in Birthday party, Get together. Kids will love this for do try and enjoy the drink :)

  • 1 cup of fresh orange juice
  • 1 cup of fresh lemon juice
  • 1/2 tablespoon of lemon zest
  • 1/2 tablespoon of orange zest
  • 2 cups of water
  • 1 cup of cold water
  • 1 cup of sugar
  • Ice cubes 

  1. Heat sauce pan, add sugar, water, lemon zest and orange zest. stir gently until sugar dissolves completely.
  2. Cook over medium flame for 5 minutes, then cool
  3. Strain the zest from the sugar syrup.
  4. Add lemon juice, orange juice with 1 cup of cold water.
  5. Add ice cubes before you serve and enjoy the drink !

Crab Gravy / Nandu Masala

  • 2 large crab
  • 1 big onion chopped
  • 1 chopped tomato
  • 1 tablespoon of fennel seeds, divided
  • 1/2 cup of shredded coconut
  • 1 tsp of ginger garlic paste
  • 1 tablespoon of chilli powder
  • 1/2 tablespoon of coriander powder
  • 2 tablespoon of vegetable oil
  • Salt to taste
  • Cilantro for garnishing


1. Clean and wash crab, Cut into desired size.

2. Grind coconut and 1/2 tablespoon of fennel seed, set aside.

3. Heat oil in pan. Add fennel seeds, onion and ginger garlic paste, cook till onion becomes translucent.

4. Add tomato, fry till it cooked well.

5. Add chilli powder, coriander powder and salt. Mix well.

6. Add crab and 1/2 cup of water, Check for salt taste after adding water.cover the lid and cook till the crab color changes to orange.

7. Finally add coconut paste, cook for few minutes. 

8. Garnish with cilantro and Serve with white rice.

Chicken Soup - simple version

  • 1 cup of Chicken (washed and cut into cubes)
  • 1/2 cup of frozen sweet corn
  • 1 egg
  • 1 tsp of corn flour
  • 1/2 tsp of Ground pepper (optional)
  • 1 tbsp Chopped cilantro
  • salt to taste

Serve: 2 Adults


1. Mix corn flour with 2 tablespoon of water, set aside.

2. Place chicken, sweet corn in soup pot, salt as needed and cover with 3 cups of  water.

3. Bring it to a boil, cook until soft. 

4. Add egg and corn flour, stir constantly and cook for 2 minutes.

5. Add pepper, garnish with cilantro and serve HOT!
