Surprise Egg

I made this dish for Breakfast. It was big hit in my home. My little one enjoyed this colourful surprise Egg. I served this with slices of Raisin Bread. 

Ingredients
  • 2 Eggs
  • 2 slices of Bell Pepper ( each 1 cm thickness)
  • 2 slices of tomatoes
  • 4 slices of Potatoes
  • 2 teaspoon of Butter
  • 1/4 teaspoon of Salt
  • 1/4 teaspoon of Pepper
Method: 
Shallow Fry the Potatoes and Bell Pepper


Surprise Egg

1. Melt a teaspoon of butter in  pan over medium flame.
2. Sprinkle some salt on Potatoes and Shallow fry the Potatoes,  Bell Pepper on both sides.
3. Keep it aside

Start Assembling the Surprise Egg

1. Melt a teaspoon of butter in the same pan.
2. Place the sliced tomatoes in it.
3. Add the bell pepper slices on top of it.
4. Place the potatoes slices on the centre of the bell pepper.
5. Pour the raw egg on the centre of the bell pepper.
6. Season with Salt and pepper.
7. Close the pan with its lid and cook until the egg cooked well.
8. Serve the Surprise Egg with toasted bread.

Cabbage Pakora | Cabbage Fritters

Cabbage Pakoras


Ingredients:

  • 2 cup chopped Cabbage
  • 3 Green chillies chopped
  • 1 1/2 Besan flour
  • 1/2 tsp cumin seed
  • 1/2 tsp chilli powder
  • 1/2 tsp coriander powder
  • Salt to taste
  • Oil for deep frying

Method:



1. Take all the dry ingredients in bowl with little amount of water. Mix it without lumps.
2. Add cabbage and chillies in it and mix well.
3. Heat oil in pan over medium flame. Take a small portion of mixture in spoon/hand and drop it in the heated oil.
4. Fry them both sides until it turn to golden brown. Remove the excess oil using paper tissue.
5. Serve hot with chutney or sauce.

Mysore Bonda

Ingredients

  • 1 cup urad daal
  • 2 tbsp Rice flour
  • 1 chopped onion
  • 1/2 tsp chopped Ginger
  • 1 tsp Peppercorn
  • 1/8 tsp Asafoetida
  • Salt to taste
  • Oil for deep frying

Method for Preparing Mysore Bonda



1. Wash and soak urad daal in water for about 4 hours. 
2. Drain the water and finely grind the daal in blender.
3. Add onion, peppercorn, ginger, asafoetita and salt. Mix it well.
4. Heat oil in the pan.
5. Rinse your hand with water, take a small portion from the batter. make it like a ball and drop it into the heated oil.
6. Fry it over medium flame until the both sides turns to golden brown colour and crispy.
7. Remove the excess oil using paper towel.
8. Serve with Coconut Chutney.

How To Clean The Mushrooms

Cleaning the mushroom is quite easy process. It has only 2 steps.

What you need?
Mushroom
Dry Paper tissue/Paper Towel

Method:
Rub the mushroom with paper towel/tissue. Wipe it until the black dirt goes away.
Remove the stem gently.( Twist and pull it)

Note:
Mushrooms are extremely porous. Do not soak it in water, then it will be like a sponge.

Pumpkin Penne Pasta

Ingredients
  • 1 1/2 cup Penne Pasta
  • 1 Medium slice of fresh pumpkin
  • 8 ounce of cream cheese
  • 1 cup of mozerrela cheese
  • 1/4 cup of cheddar cheese
  • 1 medium onion, diced
  • 2 tbsp All purpose flour
  • 2 cup Milk
  • 1/2 cup of Bread crumbs
  • 1 tbsp of oil
  • 1/2 tbsp of salt

Method 


1. Boil the penne pasta with a tablespoon of oil and 1/2 tsp of salt.
2. Drain the water and Rinse in the cold water and drain again.
3. Discard the pumpkin skin and cut into small cubes.
4. Steam the cubbed pumpkin and blend it in the blender.


1. Heat pan.  Add butter and onion, sauté it until translucent.
2. Add all purpose flour, mix until thick.
3. Pour milk in it and stir for couple of minutes.
4. Now add pumpkin puree, cream cheese, mozzerella cheese and cheddar cheese. Stir until all cheese melt.
5. Add Penne pasta into the creamy mixture and cook for about 5 minutes.
6. Sprinkle Bread crumbs and cilantro and serve.

Carrot Halwa | Gajar Ka Halwa

Ingredients
  • 2 cups grated carrot
  • 2 cups Milk
  • 1/2 cup sugar
  • 5 no of Cashew
  • 5 no of Almond
  • 3 tbsp of butter
  • 1/4 tsp cardamom powder
  • A pinch of salt

Method


1. Heat 2 tbsp of butter in pan, roast cashew and almond.

2. Add grated carrot and milk in it, cook  in medium flame until the milk completely evaporated.

3. Add cardamom powder, salt and give a stir.

4. Add sugar in it, stir constantly and cook till the sugar thickens.

5. Add butter and mix well. Remove from the flame.

Tandoori Chicken

Ingredients:
  • 2 Chicken thighs
  • 1 tsp Kashmiri red chilli powder
  • 1/2 tsp garam masala
  • 1 tsp Ginger garlic paste
  • 1/2 coriander powder
  • 1 tbsp lemon juice
  • 2 tbsp of curd
  • Olive oil spray
  • 1 tsp Salt

Method:


  1. Wash the chicken and slit it with knife.
  2. Take a mixing bowl, add all the ingredients (expect chicken) and mix well.
  3. Take chicken and rub it in the mixture.
  4. Marinade the chicken for 6 hours or overnight.
  5. Preheat oven to 420 F (Bake mode)
  6. Take a baking pan, place the marinaded chicken and spray olive oil on it. 
  7. Bake for 30 minutes. 
  8. Serve with Ranch dip and sliced onions.

Braided Chicken Pie

Ingredients


For Making Dough

2 Cups of All Purpose Flour
1 tbsp of active dry yeast
1 tsp of salt
1/4 tsp of sugar
1 egg ( divided for dough and brushing)
1/4 cup Milk
2 tbsp of Butter
4 tbsp of oil

For Making Chicken Filling

1.5 lb Minced chicken
1 Medium onion, diced
1 tbsp oil
1 tomato diced
4 Garlic cloves, chopped finely
1 inch Ginger, chopped
3 Green chillies, chopped
1 tbsp Garam masala or Chicken Masala
1 tsp of salt
1/2 tbsp Fresh ground pepper
1/2 cup chopped cilantro

Method of making Dough



1. Take a mixing bowl, add all the dry ingredients and mix well.

2. Add milk,butter, egg and oil. combine all and mix until to form like a soft ball.
3. Cover with plastic wrap and let it rest for 1 hour.

Method of making chicken Filling


1. Heat a tbsp of oil in pan, add ginger and garlic, sauté for 1 minutes.
2. Add onion in it, sauté until translucent.
3. Add Tomato and sauté until it turn soft.
4. Add Chicken, chillies,salt and pepper, cook for 15 minutes over medium flame.
5. Finally add cilantro and give a stir. Switch off the flame and Keep it aside.

Roll the Dough


1. Flour the rolling surface
2. Roll the dough to oval shape and trim the uneven edges with scissor.
3. Put the filling in the centre.

Start Braiding :)


1. Preheat oven to 200 C.
2. With a sharp knife, cut the dough at an angle ( Each slit an equal distance from prior one). Repeat the same on the other side.
3. Take one strip  and lay it across the filling.Take the one facing from other side and lay it across the filling ( Overlap eachother).
4. Do it for the remaining strips ( left to right and Right to left)
5. when reached the bottom, just tuck in neatly (like fish face, place Pepper corn to make eye of the fish). Leave the top like fish tail.
6. Brush the braid using egg and bake for 30 to 45 minutes.
7. Pie is Ready. Slice it and Serve.
