Fish Dum Biryani Recipe

Dum biryani comes in a layer of rice, meat gravy/masala, mint & cilantro leaves, fried onion, fried cashews and raisins and some saffron milk or orange food color. The flavor of the biryani is rich and it tastes so great too.. Fish Briyani is one of my favorite. It is easy to make and extremely flavorful. I hope these stepwise pics will help you to follow the recipe in a easy way.


Fish Dum Biryani Recipe

Ingredients:

For frying Fish:

1/2 kg of Fish, cut into pieces
1/2 tsp Ginger garlic paste
1 tsp Chilli powder
1/4 tsp turmeric powder
1/4 tsp Cumin powder
1 tsp Salt
juice of half lemon
oil for shallow frying

For making Masala:

4 Tomatoes , chopped
1/2 tsp Chilli powder
1/2 tsp turmeric powder
1 tsp Cumin powder
2 tsp Ginger garlic paste
1/2 cup Yogurt, whipped
2 Green chilli, chopped
2 tbsp of mint leaves
3 to 4 tbsp of coriander leaves
Salt to taste
juice of half lemon 

For making Fragrant Rice:

2 cup of long grain rice / Basmati rice, washed 2 or 3 times and soaked it in water for 20 minutes
Whole garam masala ( 2 bayleaf, 2 cinnamon small stick, 1 star aniseed)
1/2 tsp salt
5 to 6 cup of water
1 tbsp Ghee/clarified buter

For Garnishing:

Oil for frying
1/2 cup onion, sliced
2 tbsp oil
1/2 cup cilantro and mint leaves, finely chopped
Dash of saffron infused milk or orange food color

Method:

Making of Fish fry



1. In a mixing bowl,take all the ingredients mentioned below frying fish.

2. Mix all well together and let it sit for atleast 20 minutes.

3. Heat tawa over medium flame, add some oil on it.

4. Once oil become hot, fry the fishes on both sides for about 2 minutes in order to hold its shape in the briyani. Hence, its not necessary to cook fully, because it will get cooked further in the masala later.

5. Remove the fish to plate and set aside.

 Make Fragrant Rice




1. Heat ghee in big vessel on medium heat, add whole garam masala into it.

2. When you get the aroma of whole garam masala, pour 5 cups of water and add salt in it.

3. Once it begins to boil , add basmathi rice.

4. cook uncovered until the rice is half cooked.

5. Drain water using colander / filter and keep the rice aside.

Make caramalised onion and Fish masala:



1. Heat oil in medium pan on medium flame. When the oil becomes hot, add onion and  fry till it turn to golden brown. Set aside.

2. In the same pan, add chopped tomato and close the lid , cook til it become mushy. 

3. Add ginger garlic paste  and whipped yogurt, mix and cook for couple of minutes, uncovered.

4. Now add spice powders, salt and leaves . Mix, close the pan and cook until oil seperated from masala/curry. 

5. Add cooked fish in it, give a stir and cook until the fish cooked well.

Fish masala is ready! :)..     
 
Layer them all: 



1. Take large vessel ( I used pressure cooker) layer the rice and fish masala.

2. Start layering : rice at bottom, some fish gravy over the rice. Then garnish with fried onions, chopped leaves,  again layer rice on fish gravy and finally add dash of saffron water.


3. Take a heavy bottomed tawa and heat it in simmer mode.

4. Now keep the cooker, close with its lid (dont put cooker weight) on the tawa and cook for 25 minutes. Its done!!!  Serve hot with your choice of gravy and raita.

Semiya Payasam | Vermicelli Kheer Recipe

Kheer is a rice pudding from the cuisine of the Indian Subcontinent, made by boiling rice, broken wheat, tapioca, or vermicelli with milk and sugar; it is flavoured with cardamom, raisins, saffron, cashews, pistachios or almonds. It is a traditional Indian Dessert, which we usually make it for all festivals. It is creamy and delicious. I have made this with semiya/vermicelli. It can also be made with Cream of wheat/Sooji/Rava. 



Ingredients:

  1. 1/2 cup - Vermicelli
  2. 1/2 cup - Sugar
  3. 2 cup - Milk
  4. 1/2 cup - Water 
  5. 1 - Elachi / Cardamom
  6. 1 tbsp - Ghee / Clarified butte
  7. Some cashews and raisins
  8. A pinch of Salt

Method:



Heat ghee in a pan over medium flame. Fry cashew and raisin till it turn to golden brown. Then set aside.

Fry vermicelli in the same pan for 2 minutes or till it turn to golden brown here and there. Set aside.

In the same pan, bring water to boil. Add fried vermicelli, sugar, elachi into it and cook till it become soft and transparent.

Now add milk into it and boil for a minute. Add a pinch a salt, give a stir and switch off the flame.

It will become thicken once it cooled down. Garnish with fried cashews and raisins , Serve!

Microwave Meringues - 3 Ingredients / 2 Minutes Recipe


Meringue is a delicious crunchy dessert, which is made up of Icing sugar and egg white. It is simple to make and time consuming recipe too.

You can make these meringues in less than 2 minutes. The texture of meringue is crispy and it just melt in your mouth. Store it in air tight container to maintain crispiness.

 

Ingredients:

300 g of Icing Sugar
1 Egg white
1 tbsp of Cashew, crushed

Method:


Add Icing sugar, cashews and egg white in a bowl.

Mix it all well using hand.

Mix, mix, mix until it become thick and pliable consistency. (Add some more icing sugar if necessary)




Now roll them into small balls.
 

Line a plate with kitchen paper and place 4 balls on it. (microwave in batchwise, 4 or 3 balls at a time. leave some space inbetween 2 balls, so that it wont stick to each other)

Microwave it on high for 1 1/2 minutes. It will become flatten and puff into meringue.



Serving Suggestion:

when they are cool, you can have as it is or serve these with desserts.

*Crush some meringue and sprinkle it on icecreams or fruits salads.

*Make sandwich meringue with whipped cream and fruits.

Strawberry Grape Lemonade


Ingredients:

2 cup Strawberries
2 cup Seedless grapes
2 tbsp Honey
1 cup water
2 tbsp lemon juice
1/2 tsp lemon zest
1 tbsp Basil seed and water for soaking it

Method :

Soak basil seeds in water and wait until  it swells up. ( it takes 15 minutes)
 

Wash fruits with fresh running water.

Take fruits, lemon juice, lemon zest, honey and water in blender. Blend them all until puree.

Filter the pulp using siever.

Pour juice in serving glass. Garnish it with soaked basil seeds and lemon wedges.

Teddy Bear (chocolate stuffed) Bread


I baked this bread for my daughter. She loves teddy bear and chocolates. Hence, I decided to make chocolate stuffed teddy bear bread. She was so excited to see and she just loved the bread. It is a very simple recipe. The bread is so soft and delicious. Try out this cutie bear for your little one and surprise them. Thanks for reading.


Step 1: Ingredients

The ingredients you will need
2 cups of All purpose floor
3/4 cup of warm milk + some milk for brushing the bread dough
3/4 tbsp of active dry yeast
1 tbsp of sugar
1 tsp of salt
2 tbsp of vegetable oil
1 bar of milk chocolate 
Some raisins for bear's eyes and nose

Step 2: Making of Dough


In a small bowl add warm milk, sugar, salt and yeast. stir well and rest for 10 minutes or until the yeast completely dissolved in the milk.

Take a large bowl, add all purpose flour, yeast mixture and knead for few minutes.

Add little water to make the dough right consistency. Finally add oil and knead well.

Close the dough with plastic wrap/ lid. Rest for 1 hour.

Step 3: Teddy bear bread


After an hour, the dough should doubled the size. Knead it again using oil.

Divide the dough into 9 portions ( 2 big size and 6 small size) and roll into balls.

Line the baking tray with baking sheets.

Take a big size dough and make it like small disc, Place some pieces of chocolate bars in the center and bring the edges to seal.

Place the bun in baking tray and repeat the process for stomach, legs, hands and ears. 

Arrange the stuffed dough balls like teddy bear shape. Keep raisins for the eyes, nose and navel.

Brush the bun with milk and cover it with lid / plastic wrap, let it sit for 10 minutes.

Step 4: Bake it up


Preheat oven to 200 deg C

Bake the buns for 20 to 30 minutes or until it turns golden brown color. ( mine took 26 minutes)

Brush with some butter on top of the bread and serve warm with coffee / tea.

Moong Dal Sundal | Pasi Paruppu Sundal

Pasi paruppu Sundal | Moong dal Sundal is easy and healthy dish. Though it's simple to make, you have to be very careful while cooking moong dal. If it's over cooked, the texture won't be crunchy and seperated.  I usually make this Sundal as prasadham during navaratri festival.  Sometimes I serve this as evening snack.



Ingredients


1/2 cup Moong dal

2 to 3 tbsp of Coconut
Salt to taste

To temper

1 tbsp of oil
1/2 tsp of urad dal
3/4 tsp of mustard seed
3 to 4 no of dry red chilli
A sprig of curry leaves
A pinch of asafoetida

Method:




Dry roast moong dal  until it turn to slightly golden brown color and set aside.


Add water and salt in a pan, bring them to boil. Once it started boiling vigorously add roasted moong dal into it.


Cook until it soft and separated (it takes few minutes to cook, keep an eye on it. Don't over cook them)


Once it cooked, strain water and keep the moong dal aside.


Heat oil in a pan, add the ingredients mentioned under 'to temper'.  Once it sputtered, add cooked moong dal and coconut. Mix all well and remove it from flame.

Strawberry Basil Lassi / Sweet Lassi

Lassi is a cooling and refreshing summer drink. It is yogurt based drink, which is originated from India. Here, I made fruit based lassi. You can replace strawberry with your choice of any pulpy fruits like Mango, Kiwi, Cantaloupe. It taste sweet and really good. Please try this out, I hope you will like it. Thanks for reading :)

Ingredients

1 cup of Strawberries, Frozen or Fresh
1/2 cup Plain yogurt
1/2 cup water
5 tsp Sugar
A pinch of salt
1 tbsp of Basil seeds and some water for soaking it

Method: 

Soak basil seeds in a cup of water for 15 minutes.

Take yogurt, strawberries, sugar and water in blender. Blend them until smooth.

How to serve:

2 tbsp of Rooh afza (Optional)
Soaked Basil seeds
Strawberry Lassi
Serving glass

Take a serving glass, add a tbsp of Rooh afza in it.

Pour strawberry lassi over it.

Finally add soaked basil seeds and garnish glass with strawberry slice.

Homemade Crayon Playdough


Crayon Playdough recipe is very simple to make. You can make different colors of playdough using different shades of crayons. It gives bold color to dough. Try it out for your preschooler, they will love it for sure. Do some fun activities with your kids like learning shapes, colors, drawings, letters using these playdough. I am having great time with my little one. She is just loving it ;)

Ingredients




Some different colors of crayons
2 cups of All purpose flour
1 1/4 cups of Water
2 tbsp of Vegetable oil
1 tbsp of Salt
2 tbsp of Cream of Tartar

Method



Take all dry ingredients in mixing bowl and mix all together until well combined.

Roughly chop all crayons into bit size pieces



Since we are using crayons, I would suggest to use old vessel to make this playdough.

Heat pan over medium flame, add oil and crayons into it.

Once the crayons completely melted, add in water and bring it to boil.




Once water started boiling, add dry ingredients and mix well with spatula immediately to avoid lump formation.

once the flour absorbed all water, transfer the dough into flat surface area. ( i used my cutting board)

Allow it to cool, until you can tolerate kneading.

Knead the dough for few minutes and let it completely cooled down.



once it cooled down, store the dough in air tight container to prevent hardening.

Grilled Prawns

Grilled Prawns

Grilled prawns are made with marination of vinegar and spice powders. It is so spicy and tasty.

It would be a great appetizer for party or get together. Please do try this simple recipe, you will definitely love it. Thank you.

Ingredients


15 no of Prawns, peeled, deveined and tail intact

2 tsp Kashmiri red chilli powder

1 tsp Garam masala

4 tbsp White vinegar

3 tbsp of Olive oil

2 tbsp of Cilantro, chopped

Salt to taste

Method


Take vinegar, chilli powder, garam masala and salt in mixing bowl. Mix it all well until combined.

Add prawns into it. Mix well and marinade it for 1 hour.

After marination time, take prawns and thread onto bamboo/metal skewer.


Heat oil in pan over medium flame.

Once the oil heated, grill prawn for 2 minutes on each side or until prawns are cooked well.

Serve with lemon slices.

Baked Chicken Alfredo Penne Pasta


Recently i got a pasta sample from Del Monte. I have experimented many pasta dishes and published some recipes in my blog. But this time, I really wanted to try something different which i have never tried before and it should be simple with easy available ingredients. So here comes Baked Chicken Alfredo Penne Pasta.  The star ingredient of this recipe is Del Monte "Penne Rigate". I decided the dish should be rich, creamy and cheesy. Hence I chose to make Alfredo sauce, which is so creamy and yummy. The combination of pasta, stir fried chicken and veggies with Alfredo sauce is absolutely luscious. We enjoyed it lot. So, please try this recipe and share your feedback. I would love to read that. Without taking so much time, I am gonna share this recipe now. Read on for the detailed recipe. Thanks.


Origin of the Dish : Italy
Preparation time : 15 minutes
Cooking time : 35 to 45 minutes
Level : Easy
Method of cooking : Stove top and Oven method
Equipment: Skillet, pot, spatula, glass baking dish
Servings : 5 Adults

Ingredients :

For boiling pasta:
Del Monte Penne Rigate - 2 cups
Water - 4 cups
olive oil -1 tbsp
Salt - 1/2 tsp

For Stir fry:
Chicken boneless and cut into cubes - 250 gm
Vegetables - 1 1/2 cups ( I used Zucchini, carrots, peas, corn, mushroom )
olive oil - 2 tbsp
Salt and pepper for seasoning

For making Alfredo sauce:
Butter, room temperature - 1/4 cup
Heavy cream - 1 cup
Parmesan cheese, shredded - 1 cup
Garlic clove, crushed  - 1
Fresh Parsley, chopped - 1/4 cup

For Topping:
Mozzeralla cheese, shredded - 1 cup 



Method for making Baked Chicken Alfredo Penne Pasta

Step 1: Making Boiled pasta



In a large pan of water, cook 2 cups of uncooked penne pasta with olive and salt for 9 to 11 minutes.

Once it cooked, drain the water with colander and set the pasta aside.

Step 2: Making Stir fry:



In a large Skillet or pan, heat a tbsp of olive oil and add the uncooked chicken , season them with some salt and pepper.

Saute it for few minutes until it cooked well and there is no pink raw meat in the center of chicken chunks. Then transfer the cooked meat into plate and set aside.



In the same skillet, heat a tbsp of oil and add in all vegetables. Season with salt and pepper and saute until it cooked well. Then transfer the stir fried veggies into chicken plate and set aside.

Step 3: Making Alfredo Sauce:



Meanwhile preheat oven to 350 F.

In a medium skillet, melt butter over medium flame. Add in fresh cream and simmer for 5 minutes.

Now add crushed garlic and Parmesan cheese. whisk quickly and continuously until it get thicker. 

Add in fresh parsley leaves and stir well.

Step 4 : Making of Baked Chicken Alfredo Penne Pasta



Add cooked pasta, stir fried into Alfredo sauce and mix well until all combined.

Transfer the pasta mixture into glass baking dish and spread mozzarella cheese evenly on top of the pasta.

Bake it for about 15 to 20 minutes or until the cheese is melted and turn to slightly golden brown color.

That's all :).. Yummy Baked Chicken Alfredo Penne Pasta is ready is serve.

For a complete meal, I would suggest to serve this with toasted bread, leafy salad and a cup of fresh juice.

Review : Very Healthy Spiral Slicer by Varietyland


Recently I got a chance to review a product Very Healthy Spiral Slicer by Varietyland.  I am using this little kitchen gadget since  a month. Today I am going to share my experience about this product.

It comes in a compact box, which is perfectly packed. In the box, you will get Spirailizer tool,  little brush for washing/cleaning, pushing attachment and mini cook book.




Spiral slicer is a compact kitchen gadget. you don't need much space to store it. 

It is built in with premium quality of sharp stainless steel blades .  you can make  two types of vegetable strands. (Thick and Thin)

Cleaning the spiral slicer is also so simple. It's comes with a small brush, which you can clean it without hurting yourself.

You don't need to assemble the gadget. Just attach the veggie in push attachment and slice it. 

You can make strands of veggies like carrot, radish, cucumber, zucchini, tapioca, brinjal, broccoli. 



Vegetables are rich in fiber, proteins and minerals. It is important to add in our daily diet. But my daughter is a picky eater. She doesn't eat veggies more than a mouth. I made baked vegetables using this spiral slicer.  she could not recognize that is vegetables and she liked the appearance (just like colorful noodles). I am sure, it will help many moms to add healthy veggies to their picky eater kids.

Overall, I am impressed with this product. It is very useful for me.
