Oven Baked - Japanese Sweet Potato Fries

These fries are oven baked,  made of sweet potatoes with oil and some spices. It is my first attempt of  making fries in conventional oven. It came out so well. It is easy, tasty and healthy recipe. Try it out and share your feedback in the comment section. Thanks :)

Preparation time : 10 minutes
Baking time        : 20 minutes


Oven Baked - Japanese Sweet Potato Fries

Ingredients

3 Japanese sweet potato, medium size
1/8 cup of olive oil
Salt as required
seasoning spices (optional)

Method


Sweet Potato Fries

Preheat oven to 425 F.

Wash all the sweet potatoes thoroughly in running tap water and pat dry them

Using sharp knife, peel skin (optional) and cut them into desired length & thickness ( thinner you cut, easy to cook)

Take them all in mixing bowl, add oil and salt ( if you are using spices, add that too). Then toss it well.

Arrange it  in baking tray which is lined with aluminium foil sheet/baking sheet, make sure they are all evenly spaced. 

Bake it for 10 minutes, then flip the fries to opposite sides and bake again for 10 more minutes.

It's done!  Serve hot with your favorite dip.

Mutton Briyani | Gosht Briyani

Mutton Briyani | Gosht Briyani

Mutton Biryani | Gosht Briyani is a popular South Asian main course dish. It is made with aromatic spices, rice and Mutton.
The flavor of the biryani is rich and it tastes so great too. It goes well with simple raita and boiled egg. 


Ingredients:

For Mutton marination:

1 lb mutton, washed
2 tbsp thick curd
1 tbsp lemon/lime juice
2 tsp ginger garlic paste
1 tsp Kashmiri chilli powder
2 tsp Coriander powder
1/2 tsp turmeric powder
1 tsp Garam masala powder
1/2 cup coriander & mint leaves
Salt as required

For Briyani:

2 cup Basmathi/long grain rice
Whole garam masala ( 2 cinnamon stick, 1 star anise, 2 big bay leaf, 4 cloves, 1 cardomon)
1 tbsp of ghee
1 cup onion, sliced
1 cup tomato,sliced
2 tsp ginger garlic paste
5 green chilli, slitted
1 tbsp garam masala
1 tbsb coriander powder
1 tsp red chilli powder
1/2 cup coriander & mint leaves
Salt as required

Method:


Mutton Briyani - Pressure Cooker Method


  • Wash the rice with fresh running tap water for trice and soak it for about 20 minutes.
  • Take all the ingredients in mixing bowl mentioned under marination, mix all well and marinade for 30 minutes.
  • After marination time, take mutton mixture in pressure cooker, add 1/2 cup water and close the cooker with its lid.
  • Cook for 5 to 6 whistle and switch off the flame.
  • Once the steam settles down completely,  open the lid carefully.
  • Transfer the cooked meat to another vessel.
  • Add ghee in same pressure cooker, add in whole garam masala.
  • Add ginger garlic paste and saute for a minute.
  • Add onions, chilli and saute until it turn to translucent.
  • Add in tomatoes, saute until soft.
  • Now add all spice powders and salt, mix all well.
  • Add the cooked meat into cooker, and cook for 5 minutes.
  • Drain the water from soaked rice. Add rice into the cooker and mix well without breaking it.
  • Add 4 cup of water in it, check salt taste once you added water. ( add some cilantro leaves (its optional))
  • Close the cooker with its lid and Cook for 2 whistle.
  • Remove from the flame. Once the steam settles down completely, open the lid carefully.
  • Garnish with cilantro and mint, serve hot with boiled egg and your favorite choice of Raita.

Stove Top Pizza | Skillet Pizza


Whenever I plan to make pizza, I start my preparation at least 4 hours before because of its resting time and baking time. But this recipe requires only less than 20 minutes.
No Resting time, No yeast, No water for dough making. The crust is crispy bottom, soft and fluffy in texture. I added spinach, mushroom, onion and bacon for toppings. It taste so good and we liked this quick pizza recipe. Try it out, I hope you ll like it as much as we did.
Dough preparation : 3 minutes
Assembling pizza : 3 minutes
Cooking time : 10 to 12 minutes
Cooking method: Stove top
Yield : 8 medium slices

For Pizza Dough
1 cup All purpose flour
1 large Egg
3 tbsp Curd/Yogurt
1 tsp Baking powder
2 tbsp oil for dough + 1 tbsp for greasing the pan
1/2 tsp Salt
For Toppings
1/2 cup sliced Mushroom
1/3 cup chopped onions
1/2 cup chopped Spinach
1/2 cup roughly chopped cooked Bacon
4 tbsp Pizza sauce
3/4 cup Mozzarella cheese
For Cooking Pizza:
Heavy bottom pan with its lid ( I used 8 inch pan)

Method for making Pizza dough


In a mixing bowl, add egg,curd, oil and salt. Mix with spoon/spatula until all well combined.
Sift flour and baking powder, mix and knead without any lumps. ( Add extra oil and knead, if its sticky)

Assemble toppings

Take heavy bottom pan and grease it with some oil.
spread the dough evenly on the pan.
Spoon some pizza sauce on dough and spread it with spoon.
Add on all the toppings. First I have added onions, then spinach, then mushroom, then bacon.
Finally sprinkle mozzarella cheese on it.

Cook on stove Top


Place the pan on stove, set the flame to high.
Close the pan with its lid.
Cook for 2 minutes in high flame.
Then reduce the flame to medium and cook for 8 more minutes.
After 8 minutes, open the lid and check the top and base of the pizza.
The base should be turn to golden brown color.
If its not done, cook for 2 more minutes with closed lid.
Once it cooked, remove the pan from flame. Tilt the pan to 45 degree, the pizza will slide to the plate easily.
Sprinkle some chili flakes on pizza and slice it up and serve.

JELL-O Rainbow Cake Trifle

JELL-O Rainbow Cake Trifle... This dessert is especially for Rainbow and JELL-O lovers.
I have used different flavor of Jell-O fruity mix in the cake, it gave wonderful taste to the cake. I am sure kids will love this colorful treat.
INGREDIENTS
For Jell-o Cake
5 different Jell-o mix , You will need 1 tbsp from each mix.
5 eggs , yolk and white separated
2/3 cup granulated sugar (divided into two 1/3 cup portions)
1 teaspoon lemon juice
1/2 teaspoon finely grated lemon zest
2/3 cup all purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
3 tablespoons melted butter
Food colours
For Whipped Cream Frosting
1 sachet of whipped topping mix
1/2 cup milk
1 tsp Vanilla essence
Cake Batter:
Take egg yolks in mixing bowl, add lemon zest and lemon juice in it.
Beat egg yolks until thickened and lightened, gradually add 1/3 cup of the granulated sugar, continue to beat until thick and light yellow.
Take egg whites in large mixing bowl. Beat egg whites until soft peaks form then gradually beat in the remaining 1/3 cup sugar. Beat until stiff peaks form.
Fold yolk mixture into whites.
Sift flour, baking powder and salt into a separate container; add to egg mixture, folding in carefully.
Finally fold in melted butter.
Cake Batter is ready.
Jell-o Rainbow cake
Preheat oven to 375 F.
Divide batter into 6 portions.
Add each portion a different jello-o mix. Then add few drops of respective food color to each portion of cake batter. Mix well until to get uniform color.
Place batter into individual ziplock bags or a pastry bags.
Prepare a baking dish by lining it with waxed or parchment paper.
Draw stripes with the batter onto the parchment, decide whether you want to have long lengthways (parallel) stripes or short perpendicular stripes.
Baked for about 10-12 minutes until a toothpick inserted comes out clean, the cake is firm to the touch and the edges may be just the slightest bit brown
Remove from oven and allow to cool slightly.Flip the cake over onto a plate and remove the parchment paper carefully.
Slice the cake into medium pieces.
Jell-o Rainbow cake is ready.
Whipped cream frosting

Chill the bowl and whisk for about 15 minutes in freezer.
Take one sachet of whip topping mix , vanilla extract and milk in chilled bowl, beat it in medium high speed until it soft peaks form.
Take them in ziplock bag or piping bag.
Rainbow Trifle

To make Trifle, place some cake on down layer, put some whipped cream frosting on top. Then start another cake layer. Repeat until you reach top of dish.
Garnish with some crushed rainbow cake.
Yummy colorful dessert is ready to serve now.. Enjoy :)

Stir Fried Asparagus Recipe - Simple method

Asparagus is loaded with nutrients. It is a very good source for fiber, folate, vitamin A, C, E and K. This recipe is simple to make. You can make this in less than 10 minutes.

Ingredients

  • A bunch of Asparagus, washed and ends trimmed
  • 1/4 tsp of Garlic powder ( or 2 crushed garlic)
  • 1/2 tsp of Sesame seed
  • Salt and pepper as required
  • 1 tbsp of Sesame oil

Method:

Heat oil in a heavy large pan/skillet over medium flame.
Add in asparagus and garlic powder, stir fried it until crisp and tender.
Finally add salt and pepper, toss it for about 1 minute.
Remove the stir fried from flame, transfer it to serving bowl.
Sprinkle with sesame seeds and serve.
