Butter Murukku Recipe

Butter Murukku is a traditional Indian snack made during festival time. Butter Murukku is made with rice flour, besan flour and gram flour.  It is easy to make, crispy and melt in mouth texture. There are wide varieties of Murukku recipes with different flour proportion. I have posted 2 varieties in my website. Click on the link to check

Ingredients

Rice flour 1 cup
Gram flour 1 tbsp
Besan flour 2 tbsp
Water 1 cup
Sesame seeds 1 tbsp
Asafoetida 1/8 tsp
Butter 3 tbsp
Salt to taste
Oil for deep frying

Method

Take water in a pot and bring it to boil. Add in butter, salt and mix until it dissolved.

Add all flours into the boiling water , immediately remove the pot from flame and mix it all without lump using spatula. Knead well and the texture of the dough should be in thick. Add some rice flour if it's still sticky.

Keep the dough covered and let it cool down for sometime.
Once it is warm enough to handle, add in asafoetida, sesame seeds and knead all together.

Now divide the dough into 6 to 7 equal portion. Take a portion, place it in piping mold. I used star tip for making this murukku.  You can directly press it into the heated oil. But with the piping mold it's pretty hard to press. So I just pressed it in plate and transfered for frying.

Head oil in a pan for deep frying over medium high flame. Test oil with a pinch of dough, if it is rise up immediately, then the oil is ready for frying.

Gently drop the piped dough into heated oil. Fry them batchwise on both sides until it turns to golden brown color.

Remove excess oil in paper towel.

Note:

Don't forget to cover the dough to avoid from drying.
Since I dont have murukku press, I have used piping with star tip.
Fry it in heated oil, else it will absorb more oil and Murukku will become soggy.
Store it in air tight container.

Ring Murukku Recipe

Diwali is approaching in couple of days. I have a list of sweet and savory dishes to make for this celebration. I dunno whether I can make all of them, but sure I will try my best. Today I made this cute shaped ring murukku. It turned out so good.  Ring Murukku is a savoury dish, which is made of spicy rice flour dough, roll them into ring shape and deep fried in vegetable oil. Check below for the detailed recipe.

Ingredients

Rice flour 1 cup
Water 1 cup
Red chilli powder 1 tsp
Sesame seeds 1 tbsp
Asafoetida 1/8 tsp
Butter 1 tbsp
Cumin seed 1 tsp
Salt to taste
Oil for deep frying

Method

Take water in a pot and bring it to boil.

Add in butter, salt and give a stir.

Add rice flour into the boiling water , immediately remove the pot from flame and mix it all without lump to make dough. Knead well and the dough should be in thick texture. Add some flours if it's still sticky.

Keep the dough covered and let it warm for sometime.

Once it is warm, add in chilli powder, asafoetida, sesame seeds, cumin seeds and knead all together.

Take a small portion (like gooseberry size) from the dough, roll into a thin rope and join the end of rope to make ring. Repeat the same procedure for the rest of dough.

Head oil in a pan for deep frying over medium high flame.

Gently drop the ring shaped dough into heated oil. Fry them batch wise  on both sides until it turns to golden brown color.

Remove excess oil in paper towel. Once it is completely cooled down, transfer into air tight container.

That's all :) ADVANCE HAPPY WISHES TO YOU ALL!

Note:

Here I made this with store bought rice flour. It will taste so better if you try with homemade rice flour.

Test oil by adding a pinch of dough, if it's rise up immediately, then the oil is ready for frying.

Lemon Rosemary Chicken

Lemon Rosemary Chicken

Lemon Rosemary Chicken is a moist, flavorful roast chicken dish.  It i s so simple to make. You first marinade the chicken thighs with lemon, paprika/pepper and salt for 15 minutes. Then shallow fry it a skillet with lemon slices, rosemary and onions. Once the outer skin turned to crispy and nice golden brown color, transfer the skillet into the oven and cook for an hour. Sounds simple and yumm, isn't it!? Read on for the detailed recipe.

Resting time : 15 minutes
Cooking time : 1 hour
Makes : 3 Servings

Lemon Rosemary Chicken

Ingredients

3 Chicken leg with thigh, with skin
1/2 cup Onion, chopped
1 tbsp of fresh Lemon juice plus 6 slices of lemon
2 sprig of Rosemary
1 tbsp of chopped garlic
2 tbsp of unsalted butter
1 cup of Chicken broth
Salt and pepper for seasoning ( I used paprika, instead of pepper)

Method:

Wash the chicken with fresh running tap water and pat dry them thoroughly.

Marinate the chickens with lemon juice, salt and pepper/paprika for 15 minutes.

Melt butter in a cast iron skillet on medium flame.

Add in rosemary and slices of lemon.

Once the flavor comes out from rosemary, place the chicken thigh upside down on pan and fry until it turns to nice golden brown color.

Flip the chickens to the other side and cook again for ten minutes.

Take the fried chickens out from the skillet using tongs. Keep it on a plate and set aside.

preheat oven to 375 deg bake mode.

Now I am going to use the same skillet for frying onions and garlic. A tablespoon butter/chicken fat is enough for frying it. So just remove the excess butter from the skillet.

Add in onions and garlic and saute for a minute on medium flame.

Add chicken broth, bring it to boil.

Once it begins to boil, place the fried chicken on the skillet, keep a slice of lemon on each chicken pieces. Transfer it to the oven and bake them for an hour or until it cooked well. After the cooking time, take out the skillet from the oven, let it sit for 5 minutes.

Serve it with mashed potatoes and sauteed veggies. It's yumm!

Homemade Szechwan Sauce

Homemade Szechwan Sauce

Sichuan sauce / Szechwan sauce, is a super spicy sauce which is originating from Sichuan province in southwestern China. It has bold flavours, particularly the pungency and spiciness resulting from liberal use of garlic and chili peppers, as well as the unique flavor of the Sichuan pepper (source:wiki). I could not find Szechwan pepper here, so I used normal dry red chilli. You can make many recipes using this sauce like Szechwan rice, Szechwan noodles, etc.. This sauce will stay good upto a month if you store and use it properly.
