Fried Chicken Recipe


This is the best fried chicken I ever made. It was soo good :)  Any Fried chicken lover out there!! This is for you. You can make a perfect fried chicken at your home. It is moist, tender and crispy. A few ingredients is needed to make this dish. It is perfect starter for any occasion. Here I have used All purpose flour for the outer crispy layer. You can replace it with bread crumbs. I hope you will like my version of fried chicken. 



Ingredients:

2 Chicken Breast
1/4 cup All purpose flour
1/2 tsp Italian seasoning
1/2 tsp Garlic and herb seasoning (optional)
1 tsp Paprika
1 large Egg
Salt to taste
Oil for deep frying

Method:

Fried Chicken Recipe

1. Wash the chicken breast and pat dry them. Cut into strips (1/4 inch) 

2. Combine all dry ingredients in a bowl and set aside.

3. Crack an egg in a bowl, season with a pinch of salt, whisk for 30 sec and keep it aside.

4. Heat oil in pan over medium heat.

5. Keep everything ready now! ( chicken strips, beaten egg mixture, flour mixture )

Take a chicken strip, dip it in egg mixture, then dredge it in the flour mixture and then dip it in the egg mixture again and coat it well in the flour mixture. Keep the battered strip in a plate. Now repeat the same for rest of the strips.

6. Carefully drop the chicken strip one by one  in heated oil. (fry batchwise)

7. Fry on both sides till it turn to golden brown color. It will take 3 to 5 mins.

8. Remove the excess oil using paper towel.

9. Serve hot with Ketchup or Mayo.

Garlic Roasted Chicken

Garlic Roasted Chicken

This Roasted chicken is made with 4 simple ingredients. It is easy to make and taste delicious. I have roasted some veggies along with it to make a complete meal. I served the chicken with pita bread and roasted veggies. We loved that combo. You feel free to add some herbs an spices. I am sure,it will be great.
  

Ingredients:

2 Fresh Cornish hen
1/4 cup butter
1 Garlic ( approimately 7-8 fat cloves)
Salt and Pepper

Method:

Roasted Chicken

Take butter and garlic in a microwave safe bowl. Microwave it for 45 seconds or until butter melts completely.

Brush this butter mixture to the outside of both hens. Then season it with salt and pepper.

Preheat  oven to 350 deg.

Place hens on roasting pan and roast in the oven for an hour.

When it fully cooked, remove from the oven, let stand for 5 minutes and serve!

Mini Pizza Recipe - Stepwise pictures


Pizza is one of our favorite dish. I make atleast thrice in a month. I have shared some pizza recipes in my blog. This recipe is foolproof recipe for making pizza dough. The crust is crispy bottom, soft and fluffy in texture. I added chicken, mushroom, onion and bell peppers for toppings. It was yumm. Try this no fail recipe and let me know how it turns out.

Ingredients:

2 cups of APF|Maida
1 packet of active dry yeast (8 g)
1 tbsp Sugar
1 tsp Salt
1 cup lukewarm water
1/8 cup of oil + some more for resting dough
your favorite pizza toppings
Mozzarella cheese 

Method:



In a small mixing bowl, take water, yeast,sugar,salt and oil. Mix and let it sit for 5 minutes or til it become frothy.

Take APF in a large mixing bowl, make a well in the center. Pour the yeast mixture into it.

Mix all well together. The dough with be sticky and soft.

Add some oil in dough and brush the side of bowl. Cover with plastic wrap and let it sit for 1 hour.

Once it doubled the size, poke the dough and knead for 2 to 3 minutes.



After the resting time, preheat oven 175 C.

Take a baking tray, spray olive oil and sprinkle some flour on it. (you can sprinkle with sooji/corn flour)

Take a small portion of dough, Flatten it on the tray and shape the dough into small disc shape. 

Do the same for rest of the dough. 

Spread the tomato sauce on all the pizza.

Add on your favorite toppings.

Spread the mozzarella cheese on it.

Bake for 20 minutes or until the base crust turn to golden brown.

Sprinkle chili flakes and serve hot.

Piri Piri | Peri Peri Chicken  with Homemade Sauce

Piri Piri | Peri Peri Sauce is a spicy sauce used for seasoning or marination. It is originated from portugal
. The sauce is consisting of bell pepper, Red bird eye chilli, paprika,  herbs like (oregano, basil), lime juice/vinegar. This seasoning is great for grilling meat or veggies. I prepared peri peri chicken and peri peri potatoes with this marination. It was delicious. I will be posting peri peri potatoes recipe soon here. If you are chicken lover, then you must try this marination. It's too yumm.

Ingredients:




6 Chicken leg piece, washed,  skin removed and slitted

To Grind
1 large Red Bell pepper deseed and chopped
6 to 7 Red bird eye chilli
6 to 7 big Garlic cloves
1/2 cup oil
1 tsp Oregano
1 tbsp Paprika powder
1 tbsp Red chilli powder
1 tsp Ground pepper powder
2 tbsp Lime Juice/Vinegar 
Salt to taste

Method:



Piri Piri | Peri Peri Chicken  with Homemade Sauce

Take all the ingredients mentioned under to grind column in a blender and make it to fine smooth paste. 

Now take the slotted chicken in mixing bowl. Add peri peri sauce into it. mix well and marinade for 4 hours or overnight.

After the marination time, preheat oven to 350 F on bake mode. Line a baking tray with foil and place the wire rack on it. (I am out of aluminium foil sheet, so i dint use it. Its easy for cleaning the tray)

Place the marinated chicken on the rack and keep the tray on center rack. bake the chicken for 15 minutes.

Now invert the chicken and bake again for another 15 minutes.

Take the baking tray out from the oven, transfer the chicken from rack to baking tray, then apply some sauce on all the chicken pieces. Bake for another another 25 to 30 minutes.

Spicy, Juicy Peri Peri chicken is ready now.. 

If u have extra sauce, I have two options for you :)

1. you can store it in air tight container at refrigerator upto a week or 10 days.




2. Take the extra sauce in a pan and cook over medium heat till oil separates from it. You can serve this sauce with the chicken.

Mixed Berry Lassi |  Mixed Berry Yogurt Smoothie

Lassi is my favorite summer drink. It is a popular, traditional, yogurt-based drink from the Indian Subcontinent and originates from the Punjab. It is a blend of yogurt, water, spices and sometimes, fruit. There are varieties of savory and sweet lassis. In Canada, Mango lassi is a popular drink consisting of sweetened mango pulp mixed with yogurt, cream or ice cream. It is served  in a tall glass in straw and topped with some crushed nuts. Today i am gonna share fruit lassi, which is made of mixed berries, yogurt, milk  and sugar. These are enjoyed chilled as a hot-weather refreshment. You can store it in refrigerator for 1 or 2 days.


Mixed Berry Lassi |  Mixed Berry Yogurt Smoothie

Ingredients:

1/2 cup Strawberry
1/2 cup Blueberry
1/2 cup Raspberry
1 cup Thick Yogurt
1.5 cup Milk/water
1/2 cup Ice cubes
5 to 6 tbsp Sugar or add as per your taste
A pinch of salt
Some berries for garnishing

Method:

Take all the ingredients in blender (except garnishing berries).
Blend them into smooth.
Pour into serving glass, garnish and Serve chill!

Skillet Pizza | Tawa Pizza - Eggless Recipe

Already I have posted skillet pizza recipe(click here for the recipe) in my blog. It was made using eggs. This one is made without eggs. I am so glad with the output. The pizza tasted so good. You will need 15 mins to make this yummy pizza. There is no need for resting and kneading dough. Try this quick pizza recipe, and lemme know how it turn out ;)

cooking time : 15 minutes
Preparation time : 10 minutes

You will need a skillet or heavy bottomed tawa/pan with lid to make this pizza


Skillet Pizza | Tawa Pizza - Eggless Recipe
Ingredients:

1/2 cup All purpose flour

1/2 cup Self raising flour
1 tsp Dry yeast
1 tsp Honey
2/3 cup Lukewarm water
1/4 tsp salt

Method:



Take all the ingredients in mixing bowl.

Combine all ingredients and make it to paste.

Now spread the mixture evenly on the skillet or tawa.

Add Pizza sauce or pesto on top it and spread evenly. 

Add cheese and your favorite toppings.

Cover the skillet with its lid with vent closed, cook the pizza over medium flame for 5 minutes.

Remove  the vent alone (not the lid) and cook for another 10 minutes over low heat.

That's all! Yummy pizza is ready to serve now. Sprinkle some red chilli flakes and slice it up ;)

Note:

Use heavy bottomed vessel and check the base every 5 minutes. If its became crisp, lower the flame and cook.

Bread Masala

Bread Masala

Hi friends, Today I'm gonna share simple and quick recipe. I had some left over breads in my pantry. So I decided to make a savory dish out of it. Here comes "Bread Masala recipe". For variation, while cooking tomatoes add cooked veggies  like corn, carrot, broccoli, peas to it. I'm sure it would be great with more veggies. You can have this for breakfast or snack. Try it out and tell me how it turns out .



Ingredients:

6 slices of bread, edges removed, cut into small squares.
1 medium onion, chopped
1 small tomato, chopped
1/4 cup chopped green pepper
1/2 tsp chilli powder
1/4 tsp turmeric powder
Salt to taste
A small piece of ginger, sliced
1/2 tsp fennel seeds
1/2 tsp mustard seeds
1 tbsp of vegetable oil

Chilli Bread Masala

Method:


Take bread in a large mixing bowl, add chilli powder, turmeric powder and salt. Mix them all well.  (for mixing , close the bowl with plate and shake it well until bread coated well with spices). Set aside.


Heat a tbsp of oil in deep wide pan over medium heat. Add mustard seed, ginger and fennel seed in heated oil. Once it starts to splutter, add chopped onion, and saute until it turn to transparent. Add tomato and sauce for a minute.


Add green pepper and saute for couple of minutes. ( I like the crunchiness of pepper. If you want it soft, cook couple more minutes)


Now add the spice coated bread. Mix and close the lid cook for 7 minutes by stirring occasionally.

That's all..Remove it from flame and garnish with some cilantro and serve hot..

Enoki Mushroom Omelette

Enoki Mushroom Omelette

Instead of making regular omelette, try this version. It's healthy and yumm. I have added Enoki Mushroom and spinach  in it. Enoki Mushroom is cute little mushroom which has lots of nutrients. I used organic mushrooms , so there is no need to wash it. Just cut it off, add eggs and seasonings and then cook. Simple isn't:) ? My little one loves this omelette than the regular one. Try it out for your kids, they 'll love it. It can be have as healthy breakfast with a cup of juice or eat as it is whenever you wish:)


Ingredients:


1 cup of Organic Enoki mushrooms, chopped
1/2 cup of spinach, chopped
2 Eggs
Salt and pepper to taste
1 tsp of oil

Method:

Enoki Mushroom Omelette

Crack both eggs in a mixing bowl, add all other ingredients and whisk it well.
Heat a tsp of oil in tawa on medium heat. Once the oil is heated, pour some egg mixture in it.
Cook for a minute and then flip it to other side and cook
Once it cooked, turn off the flame and transfer the omelette to plate.
Serve hot! It is so good :)

Collards Potato Patties | Collard Greens Patties

Collard Patties

These healthy patties are made of collards and potato. Collard greens are excellent sources of vitamin A, vitamin C, vitamin K, calcium and manganese, and moderate sources of riboflavin and folate. This is the first time we tried collards (we have no idea how it 'll taste). We all liked it. This recipe is easy to make and great way to include collard greens in your diet. These patties can be serve as appetizer or evening teatime snack. Please try it out and let me know how it turns out. 

Ingredients:

1 bunch of collards, stems removed and chopped into small pieces
3 to 4 medium size potato, peeled, boiled and cut into quater
1/2 tsp Italian seasoning
1 tsp chilli flaked
2 tbsp of Parmesan cheese (optional)
1/2 cup Bread crumbs, divided
1 onion, chopped finely
4 garlic clove, finely
Salt to taste
1 tbsp of oil + some more for shallow frying

Collard Patties

Method: 

Heat a tbsp of oil in pan over medium flame. Add garlic and saute for a minute.



Add onion and saute until it turn to transparent.


Add in seasoning, flakes & salt and mix all well


Add green collards and stir occasionally until it cooked well. Once it cooked add parmesan cheese now.


Remove it from flame and let it cool for sometime.


Take potato in medium mixing bowl, mash it well.


Add in the green mixture and combine all together. Check for salt taste, add if needed.


Add 1/4 cup of bread crumbs into it  and mix well. 



Take a small portion from the mixture and shape it into pattie. Then roll it in extra bread crumbs.


Heat oil in pan for shallow frying on medium heat. Shallow fry the patties on both sides until it turn to golden brown color. It will take about 3 to 4 minutes.



Drain excess oil using paper towel  lined plate.

Serve hot with ketchup or ranch sauce.
